like spoons,spatulas, tongues etc etc which is the best to use ? it needs to be ok unfinished and with lots of washing up ! oh - and splinter free

Dont think you can go wrong using beech

Hard maple is another good choice.

Or olive or sycamore. Light coloured, fine grained timbers without tannin are generaly the best
