ok - heres sort of an all day breakfast. I use a large pyrex/glass baking dish. 5 medium onions diced seasoned and slow fryied till just starting to brown. 2 cloves of garlic (to taste-but its very good for you ) finely chopped and add to onions for a few seconds before emptying the frying pan into the dish. 1 pack of bacon diced and fryed - I use bacon pieces as they are cheaper than rashers. again to taste, I like crispy. - add to dish 2 chicken breasts diced and fried. - add to dish 6 eggs beaten. and half a pint of double cream - season and add to pan and warm very slowly whilst adding 1/2 Lb of cheese. stir unit cheese is melted but dont let the eggs start to set too much. add to dish and mix ingredients. put into an oven on gas mark 4 and cook until it sets, then add slices or grated cheese to brown on top. its sort of a flan / quiche / omelet ... my wife likes to call it 'skinny flan' as she can just warm a slice up whenever she wants, and the pounds fall off. all ingredients to taste - highest carbs are in the onions, so bare that in mind. most of the rest is pretty carb free.

Sounds interesting, I love garlic and onions and bacon and eggs and .............. actually I like all the ingredients. Love the idea of a big dish to nibble at when getting peckish. Thanks for the recipe.

no worries I must visit this section more often ! sorry I didn't see your reply earlier. anyone like curries / chillies and similar ? all atkins friendly if you miss out the rice / bread etc ! an easy one for now. ... defrost and slice a chicken brest. lightly fry in butter or olive oil. then add a tea spoon curry / tika masala etc powder and mix and fry through. then let it cool. ... when you let a pot/pan cool, the ingredients soak into each other and improve the flavour ! best left over night if poss can be used cold as a carb free snack (to pick at) throughtout the day, or cold or warm with a salad for a light meal. use olive oil and chilli powder for a dressing to make the salad more filling.
