In both Spain and Mexico, testicles of steers killed in bullfights are considered to be delicacies, and served grilled with butter and olive oil based sauces
Some years ago I was in a restaurant in Madrid and the most fantastic aroma was wafting from the plate of a customer nearby.
Calling the waiter, I asked what it was that this other client was eating. " They are, how you say, the balls of the bull who die in the ring today". I asked if there was more, unfortunately there wasn't, but he told me that he would save me some for tomorrow.
I didn't eat breakfast the next day in anticipation of the delicacy to be consumed.
On arrival at the restaurant the waiter greeted me with a cheery wave and knowing wink. I sat and tucked the napkin into my shirt collar ready for the feast.
The waiter arrived and the delightful aroma of yesterday assailed my nostrils,saliva filled my mouth, I knew there was a treat under that plate cover.
He lifted the lid and ..........disappointment, such a small portion, I looked up, the waiter shrugged his shoulders and said," Senor, you must understand, sometimes the Matador win and sometimes the Matador he lose"
