I know you garnish a curry with it but do you also add it while simmering the curry or do you just lose the flavour rather than absorb it ?

Both, most of the green in Thai green curry is coriander (leaf).

Very versatile.
You can also use both the stalks and the roots. Different tastes. You can dry the seeds, grind them up and get yet another taste. Just wish it was easier to grow fresh in the UK

What you need is some Sunshine, Sunny Skies, Barbie, Some rain, and a good GreenHouse! Well 1 out of 5 ain't bad We have rain.

A recipe and a tip Mix finely chopped fresh coriander, about a tablespoon after chopping,with a finely chopped fresh Chilli in a few tablespoons of soft butter add S&P. Spread over chicken breasts which have been scored half way through with a sharp knife. Place on foil under a hot Grill till browned both sides. Serve with green beans and New Potatoes, mmmmmmm!
Course grate carrots into a microwaveable bowl add fresh chopped coriander, a little butter, S&P, and cover with cling film, shake around while cooking for 3 or 4 mins.
