Just prep'd up some Jerked chicken (in preparation for the rugby tomorrow). Being a Chilli-Head, I love Jerked Chicken - much better than curry IMHO. Here's the recipe. Sweet Pepper, diced Onion, diced 6 cloves of garlic, chopped 1 Dsp Allspice 1 Dsp Chilli powder 1 Dsp Paprika 1 Tsp Salt 2 dsp Ground Cinnamon 1 Scotch Bonnet chilli, or 4 Finger/Birds Eye chillis Drizzle of Veg Oil Whole chicken Throw all the ingredients (except the chicken )into a blender, and whizz into a paste. Add a mere drizzle of oil, but not too much; you want a coarse paste, not an oil slick. Spatchcock the chicken (chop it down the back and open it out), and score it all over. Rub the jerk seasoning into the cuts and rub all over the chicken. Place in the fridge, covered with clingfilm, and leave to marinade (the longer the better) Place in a dry meat tin and cook in the oven as you would normal chicken. Eat...then go look for your head which will have blown off by now ;D Warning: Scots Bonnet Chillis are seriously hot. Wash your hands after preparing them, and do not touch your eyes (or dangly bits )
