Well, the Rugby's on again on Saturday, so I shall be preparing another spicy dish - Jamaican curried goat. Goat is a lot more readily available now than it used to be - I've just bought 2lb from an Asian food shop for £3.34; lamb can used as a substitute but lacks the depth of flavour IMO Here is my recipe: 2lb of goat meat - cut in to cubes 2 tbsp curry powder 2 diced onions 1/2 tsp salt 1/2 tsp pepper 2 hot chillies chopped (ideally scotch bonnet or birds eye) 1 tbsp fresh grated ginger 3 cloves of garlic, finely chopped 2 sprigs of fresh thyme 1 tbsp butter Oil Mix the curry powder, onions, salt, pepper, chillies, ginger, thyme with a little oil. Rub the mixture in to the cubes of meat, and marinade in the fridge overnight. (Be carefull to wash your hands thouroughly after handling the chillis ) Scrape the marinade off the meat and save for later Melt butter in a frying pan and add meat . Brown gently. Heat a little oil in a saucepan and add the meat and the marinade ingredients and fry gently for a few minutes, stiring regularly. Add enough water to cover the meat. Bring to the boil then let simmer until the meat is tender (this should take 1hr - 1.5 hrs). Serve with rice and peas. ;D
